Looking for a way to prepare your Sonoma Sausage?

The California Dog

1 Sonoma Spicy Dog or Hot Beer Sausage
1 Handful fresh arugula
Diced yellow onions, to taste
Brown mustard, to taste

Steam or grill the Sonoma Spicy Dog or a Hot Beer Sausage. Toast the bun, Then slather it with good brown mustard and a nice sprinkling of onions. Lay arugula over all and nestle a hot sizzling sausage right on top. Delicious!

Linguine with Clams and Sausage - serves 4

1 16 oz. can Italian plum tomatoes (San Marzano if you can find them)
2 tablespoons pure olive oil
4 cloves of garlic, sliced
1 teaspoon red chili flakes
1/4 teaspoon saffron threads, crushed
1 cup fresh basil, chopped
1/2 pound Sonoma Sausage Hawaiian Portuguese Sausage, sliced
Salt and pepper to taste
2 pounds fresh Manilla clams

Heat the olive oil in a deep saute' pan over medium heat. Add the garlic slices and cook briefly, making sure they do not brown. Add tomatoes, red chili flakes and saffron. With potatoe masher, gently mash the tomatoes into sauce. Add the Hawaiian Portuguese Sausage. Simmer for 1 hour, uncovered. Add salt and pepper to taste. Add the Manilla clams and cover pan with lid. When clams are all opened, serve immediately over linguine or your favorite pasta.

Sonoma Scramble - serves 4

1 pound Sonoma Sausage Hawaiian Portuguese or Andouille Sausage
2 tablespoons olive oil or butter
1/2 large yellow onion, diced
1 large bunch fresh spinach, cleaned and chopped
8-12 large eggs, lightly beaten
Salt and pepper to taste

Slice the Sonoma Sausage Hawaiian Portuguese or Andouille Sausage into coins. Cook in a large saute' pan over medium heat until the sausage is browned and the fat has been rendered out. Pour off the fat. Add back a little olive oil or butter to the pan, and saute' the onions until softened. Add the spinach, and cover the pan. Cook until the spinach is wilted. Add the eggs and stir. reduce the heat to low and cook until the eggs are set. Season with salt and pepper to taste.
